Soft and Chewy Beef Short Rib Stew Recipe👩🍳 I made galbijjim with cost-effective beef short rib instead of beef rib, and wow- it's really delicious? I boiled it in a Le Creuset Gourmet rice cooker, so the meat is tender and soft and chewy, so delicious🥹 I used Baek Jong-won's beef short rib stew recipe as a reference for the seasoning sauce, but I sprinkled truffle oil instead of sesame oil and ate it, Oh my gosh, my house is a Michelin restaurant?🫢 I didn't know that the sweet and salty rib seasoning and the truffle flavor would go so well together! At first, I only put it in cheese potatoes, but my husband said to sprinkle it on the meat too🤣 It was just the usual galbijjim that I always ate, but when I sprinkled truffle oil on it, it was different and so delicious + I put it in Le Creuset Signature Skillet, so the heat was maintained for a long time, so I ate it until the end 🙌 --------------------------------------------------- 👩🍳Beef shank stew ➰️Ingredients 1kg beef shank, 100g carrot, 200g radish, 100g shiitake mushroom, 1 onion, water, 1/3 cup soju, 15 whole peppercorns ➰️Seasoning sauce ingredients 120ml soy sauce, 45g sugar, 60ml mirin, 30g minced garlic, 20g minced green onion, 6g minced ginger, 1.5 tablespoons sesame oil 1. Cut the beef shank into bite-size pieces and boil in water for 3 minutes. Cook only the outer surface 2. Discard the blanched water and wash the meat in water once 3. Add meat, green onions, whole pepper, and soju to the pot and pour enough water to cover the ingredients and boil 4. Open the lid and boil for 40 minutes on medium heat, then add the large-cut radish and boil for another 20 minutes 5. Add all the carrots, mushrooms, onions, and seasoning ingredients cut into bite-size pieces, cover with water, close the lid, and boil for 40 to 50 minutes on medium heat. ✔️Adjust the amount of soy sauce and sugar to your taste ✔️The heat level varies from household to household, so adjust the amount of water or the consistency of the broth to your liking ✔️I omitted the sesame oil to eat it with the aligo cheese potatoes, and sprinkled truffle oil on the steamed squid ➰️For the aligo cheese potatoes, mix milk, butter, salt, and pepper into the mashed potatoes and add mozzarella cheese to melt it.
