Originally, pasta in Italy means ‘primo’, the first dish, and it is a simple carbohydrate dish eaten before the second protein course. That’s why the portions are small. Italian families eat healthy and simple meals using seasonal ingredients. However, in Korea, it started as a high-class dish, so now a plate of pasta costs 40,000-50,000 won, and in casual places, the average price is in the 20,000 won range. When it’s not a pasta with high-class ingredients, I make my own pasta at home. I couldn’t eat aglio olio for 20,000 won… However, there is a pasta shop that I like, and one of them is ‘Unspecified Restaurant’ located in Jeju Island. The operating method has changed now, but in the past, they served a course meal and served primo pasta, and I can’t forget that pasta. The first time I visited, it was pesto pasta, and the second time, it was oil pasta, and both were so lovely. The sauce didn't drip down and stuck well to the pasta noodles, and the pasta tasted better the more I chewed it, as if it was telling me the texture of al dente. It wasn't a pasta dish served as a special dish, so the plating wasn't anything special, but it was a pasta that I kept thinking about even after I got home. Similar to my taste for ciabatta, Pasta is boring, but I like pasta that lets me taste the texture of the noodles and the taste of the noodles soaked in sauce the more I chew. They say that now they've changed to a method where the chef cooks dishes according to the mood of the day for a set price, but I want to visit again with the expectation that I might be able to eat a whole plate of pasta.
