Ingredients🗒️ •Chestnuts 800g •Water •Brown sugar •White sugar •One Maria Jufrères_Wedding Imperial tea bag •Food gauze •Pot •Weighing scale 1. Soak raw chestnuts in warm water for about an hour and peel the outer skin. 2. Blanch 2-3 chestnuts in hot water for 30 seconds each and peel the inner skin. (This is the hardest and most important task. If you've finished preparing the chestnuts, you're 80% done.) 3. After peeling all the inner skins, wrap 3 in food gauze and tie them. (So that the chestnuts don't break while soaking.) 4. Put chestnuts and one Wedding Imperial tea bag in a pot, add enough water to cover the chestnuts, and boil on medium heat for 30-40 minutes. 5. In another pot, add 600g of boiled water from (4) (add more water if needed) + 600g of brown sugar, and chestnuts from (4), boil for 10 minutes on low heat, then turn off the heat and let cool to room temperature. 6. After 24 hours, boil until it starts to boil slightly on low heat, turn off the heat, add 60g of brown sugar and mix. Let cool to room temperature again. (Repeat (6) 9 times, until the ratio of water and sugar is 1:2 _ 1~3 times brown sugar, 4~9 times white sugar) 7.
