Mix all ingredients except butter in a mixer at low speed for 2 minutes, then mix at medium speed for 5 minutes 2. Divide butter into 3 parts Mix at medium speed for 5 minutes / medium speed for 5 minutes / low speed for 8 minutes to make 100% gluten 3.
