The smell of mushroom soup I had at a restaurant a while ago kept lingering in my nose, so I made this chickpea and shiitake mushroom soup on my own :) ๐โ๐ซ Yodoong Special: I didn't follow the recipe, I did it my own way. I made it myself, so it had a texture close to hummus, but it went well with whole wheat bread! I really liked it because it was full of butter and mushroom flavors heheโฅ #Today's Recipe Chickpea and Shiitake Mushroom Soup๐ - Soak a handful of chickpeas in water and boil them for about 30 minutes. - Slice half an onion and 2 mushrooms thinly, and put them in a pan (a deep pan is good because you have to grind the ingredients and boil them again!) and stir-fry with about 2 spoons of butter. - When it turns golden brown, turn off the heat and let all the ingredients cool. - Grind the boiled chickpeas, fried onions and mushrooms, garlic, and a little water. - Put the ground ingredients back in the pan and season with salt and mapo cheese (I added a little bit of dasida :)) - Just before eating, if you lightly grind pepper in olive oil, it will add flavor and taste better!
