Mediterranean Octopus Salad🐙 Putting aside the spinach for a moment, I brought chicory today:) Because the chicory was dying🌝 Save it!! Absolutely save it!! I usually buy boiled octopus, and if you boil it again with green onions, whole peppercorns, and bay leaves for 40 minutes, it becomes really, really soft. It's so soft and delicious! I made this into a patty and it was so delicious🧡 I was going to put it in a salad this time, so I thought it would be nice if it had a chewy yet soft texture, so I immediately put it in ice water. It was chewy but soft and messy, so I ate it while cutting it up. It's no secret that I ate it. ㅎㅎ For the salad dressing, I mixed 6T of olive oil, 2T of white balsamic, a pinch of salt, pepper, 1 clove of minced garlic, 3 finely chopped caperberries, 1t of sugar, 1T of apple cider vinegar, 1/3t of Dijon mustard, and 1t of whole grain mustard. :) I also added a lot of cherry tomatoes and green olives, mixed them well, and put a lot of sprouted ricotta cheese on a deliciously toasted baguette and ate it☺️ You know?!
