Tonight, I made pork shoulder kimchi stew. I'd have to cook it a little longer to make it more tender and delicious, but since I was in a rush, it ended up being less tasty than usual. ^^; I've been trying to eat a lot of vegetables with every meal lately. This is dinner for my high school daughter and husband. When we all sat down to eat together, we usually ate mostly Korean food, usually stews or soups with side dishes. But these days, since everyone eats at different times, even if I make a little bit, I end up wasting a lot of side dishes. So, I'm focusing on individual dishes or making things on the fly. I'm mostly on a diet, so I eat mostly salads and protein. Thanks to this, my blood pressure returned to normal on the first checkup.
