Wash the skin thoroughly with baking soda since you'll be eating it too. Cut off the top of the pumpkin like a lid and scrape out the seeds with a spoon. (Because it's hard, put it in the microwave for 1-2 minutes to make it soft.) 1. Add chopped onion and one egg to the zucchini. 2. Break the egg yolk and mix. Salt and pepper are optional (I skipped it!) 3. Top with a generous amount of cheese.
