Some people may be reluctant to eat them because of their unique texture, but they are a great way to end the day with a light dinner. I went grocery shopping today and saw some purple eggplants, so I bought a few. I’m making eggplant gratin for the first time in a while. The recipe is simple. 🍆 Eggplant Gratin ● Ingredients: 2 eggplants, cheese (cheddar, or mozzarella), 1 can of tomato sauce, pepper to taste, basil powder ● How to make - Fry thinly sliced eggplants in a frying pan without oil until they turn slightly golden brown, as if you’re evaporating the moisture. - Spread a thin layer of tomato sauce on the bottom of an oven-safe/microwave-safe dish, place the baked eggplants on top, and then place the cheese on top. Repeat 3 times in the same way - After stacking the ingredients in order, cover the bowl with plastic wrap, poke holes with a fork, and heat in the microwave for about 5 minutes. Heat until the cheese is melted but not burnt. - Sprinkle pepper and basil powder according to your taste and you're done!
