I'm dying for champagne this morning. 🍆🫧✨Eggplant Carpaccio Peel and cut one eggplant in half. 2. Place the cut eggplant in a steamer (when the water boils) and steam for 5 minutes. (5 more minutes for plump eggplants.) 3. Let cool, sprinkle with olive oil and salt, and chill in the refrigerator. 4. Lightly flatten the chilled eggplant with a knife. 5. Place the eggplant in a bowl and top with salt, olive oil, ham, cheese, pepper, and Italian parsley.
