I often make cold cucumber soup in the summer. It's so refreshing and delicious :) ------- 🥒 How to Make Cold Cucumber Soup (Madame Macaron's Recipe) Ingredients: 2 cucumbers, kelp stock or water, salt, sugar, vinegar, sesame seeds, ice, cheongyang peppers, red peppers (not required) < Making the Cold Soup Broth > 700ml kelp stock or water 1 Tbsp salt (Guérande salt or sea salt without brine) 4 Tbsp sugar (white sugar recommended) 6 Tbsp vinegar (Heinz vinegar or apple cider vinegar) Remove the seeds from the cucumbers, thinly slice them, and add to the soup. (For a slightly spicier taste, add 1 minced red pepper and 1 minced cheongyang pepper.)
