Since moving into this house, I've been gardening, and since we were still cleaning the house every day, we used to eat rice cakes. And now, the pasta I'm making for the first time in ages is actually fresh noodles! The fresh pasta I had in Yeonhui-dong was the best, but from today on, our Kim Dae-gam pasta is the best! To celebrate the launch of the Marcato pasta machine, I'm making a classic carbonara! Fresh noodles are truly something else! Kneading by hand would have been incredibly difficult, but the pasta machine kneads the dough every time it passes through, so it stays chewy until the end!
