Since I got a new transparent glass air fryer, I've been enjoying roasting sweet potatoes so much more. They're so golden brown! Unlike baking them in a microwave oven, this one has a perfectly roasted exterior, just like the ones you buy at a restaurant. Every time I peel them, I'm amazed. No matter how delicious your roasted sweet potatoes are, if you want to enjoy them in a different way, making a sweet potato snack with tortillas is the perfect brunch option. While still hot, mix together mashed sweet potatoes with butter, Parmesan cheese, and sugar or allulose. Place sweet potato mousse on the tortilla and top with pizza cheese of your choice. Wrap it in half, use the egg wash as glue, and press the edges with a fork. Brush the egg wash over the top to create a golden, delicious crust. Of all the silicone cooking brushes I've ever used, this one is the most satisfying. The finish of this silicone brush is truly impeccable! Anyway, from roasting sweet potatoes to making sweet potato tortillas, it's convenient to be able to monitor and adjust the results in the glass air fryer.
