Today, February 19th, is the season of rain, when snow melts and ice melts into water. To maintain a healthy body and a peaceful daily life, I'm going to cook with seasonal ingredients and slowly document them. The first ingredient on our February seasonal table is bomdong, a sweet and crunchy cabbage that endures the cold. Bomdong, a cabbage that's hardy enough to survive the cold, is sown outdoors in winter and harvested in spring. Rich in moisture, amino acids, and beta-carotene, it's a vegetable with antioxidant properties, making it an excellent anti-aging and cancer-preventing ingredient. Our first bomdong dish: Bomdong Bibimbap. Wash the bomdong thoroughly and cut it into bite-sized pieces. Mix it well with a seasoning sauce (3 parts red pepper powder, 3 parts soy sauce, 2 parts fish sauce, 1 part vinegar, 1 part plum extract, 1 part allulose, 1 part sesame oil, 2 parts sesame seeds, 1 part minced garlic). Serve over rice with a fried egg and mix thoroughly.
