#콘수프기록집 Me-time for a working mom of two #당근라페 #에그마요 #샌드위치만들기 The only day I'm alone during my 5-day recharge vacation. ㅋ Double EE is a thing of the past, and I'm at my wit's end when I'm home alone. ㅋ Why is there so much to do at home? ;; I just clean up what's visible and really focus on my own food. ;; Eating alone makes me wonder what I'm doing, but the reality is that I can't do it unless I'm eating alone. ㅋ When I'm with my family, I eat real food. ㅋㅋㅋ They say carrot rapée and egg mayo go well together, so... I tried my best to make it. 🙈🙊 🔖See the Carrot Rapée + Egg Mayo recipe! 🥕 Refreshing and crunchy, Carrot Rapée Very versatile as a main dish side dish or sandwich filling! [Ingredients] • 2 carrots (about 400g) • 1/2 teaspoon salt • Dressing: 3 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp whole-grain mustard, 1 tbsp honey (or allulose), a pinch of pepper [Directions] 1. Slicing: Slice the carrots into thin strips. (Using a mandolin makes them look much prettier!) 2. Marinating: Sprinkle salt on the sliced carrots and marinate for about 15 minutes. Squeeze out any excess water with your hands. 3. Mixing: Add all the dressing ingredients and mix well. Done! 4. Aging: Store in an airtight container in the refrigerator for half a day to a day for a deeper flavor. 🥚 Light and Rich Yogurt Egg Mayo I used Greek yogurt instead of mayonnaise to reduce calories and increase protein. [Ingredients] • 3-4 hard-boiled eggs • 3 tbsp Greek yogurt (adjust to taste) • 1/2 tbsp whole-grain mustard • 1 tbsp honey or allulose • A pinch of salt and pepper • (Optional) Add chopped green onions or dill for extra flavor! [Directions] 1. Mash: Place the hard-boiled eggs in a bowl and mash them finely with a fork. 2. Mix: Add the yogurt, whole-grain mustard, allulose, salt, and pepper and mix well. 3. Thickness: If it's too thick, add a little more yogurt to achieve your desired texture. 4. Finish: Spread generously on whole-wheat bread and enjoy as a sandwich!
