<Tofu Hummus and Roasted Vegetables> Today, I enjoyed hummus made simply with savory tofu, served with roasted vegetables ๐Ÿฅฆ๐Ÿฅ• โ€ข Tofu Hummus Ingredients Tofu, olive oil, salt Minced garlic, walnuts, sesame seeds, pepper, lemon juice โ€ข Roasted Vegetable Ingredients Broccolini, mini carrots, lotus root Olive oil, salt, pepper, black sesame seeds Hummus is usually made by boiling chickpeas, but making it with tofu is much simpler and savory! The soft texture is a bonus ๐Ÿ˜Œ Microwave the tofu for 2 minutes, then wipe off the moisture. Add about 5 tablespoons of olive oil, but adjust the amount based on the desired consistency! 1/2 tablespoon minced garlic, 2 tablespoons walnuts, 2 tablespoons sesame seeds, 1 tablespoon lemon juice. Add salt and pepper to your liking, blend everything together, and the hummus is complete! Itโ€™s super super simple, yet the texture is incredibly smooth like a spread. Itโ€™s a truly, truly delicious hummus featuring the nutty flavor of nuts, sesame seeds, and tofu, with minced garlic as the kick. The vegetables served with the tofu hummus are mini carrots, broccolini, and lotus root.
