Aged Kimchi Soy Sauce Noodles I was craving soy sauce noodles for the first time in a while, so I decided to make some. *I referenced Ryu Soo-young's recipe. 1. Boil the thin noodles and rinse them in cold water. *It's better to boil the noodles in a frying pan instead of a pot so they don't overflow. 2. Mix 3 tablespoons of soy sauce, 2 tablespoons of sugar, 1 tablespoon of minced garlic, 3 tablespoons of sesame oil, sesame seeds, and Cheongyang chili peppers to make the sauce. *I added Cheongyang chili peppers because I needed a spicy kick. 3. Add the sauce little by little while tossing the noodles, then transfer them to a bowl. 4. Top with the washed aged kimchi and dried seaweed flakes. The sauce is really simple, but it's so delicious.
