I ordered some fresh ๐Ÿซ‘paprikas๐Ÿซ‘ from Iksan, Jeonbuk! The crunchy, refreshing, and sweet paprika was so delicious, so I consulted a cookbook I love and made Paprika Ratatouille! (I'll list the cookbook information at the bottom ๐Ÿ“–) The recipe is really simple, but it's a wonderful dish perfect for a party, so please save it and give it a try! ๐Ÿ‘ฉโ€๐Ÿณ ๐Ÿ›’ Ingredients โ€ข Main: Yellow bell pepper โ€ข Vegetables: Zucchini, eggplant, onion, cherry tomatoes โ€ข Seasoning: Breadcrumbs, Parmesan cheese, olive oil, whole grain mustard, white wine vinegar, salt, pepper ๐Ÿณ Cooking Instructions 1. Preparing the bell pepper Cut the yellow bell pepper in half and remove the seeds. 2. Chopping the vegetables Dice all the remaining vegetables into 1cm cubes. 3. Toasting the breadcrumbs Lightly toast the breadcrumbs in a dry pan without oil. 4. Roasting the Paprika Lightly drizzle olive oil over a pan over medium heat and roast the yellow paprika prepared earlier until golden brown. 5. Sautรฉing and Mixing the Vegetables Sautรฉ the chopped vegetables in a pan until golden brown. Place them in a bowl and toss with olive oil, whole-grain mustard, and white wine vinegar. Then, add the toasted breadcrumbs, salt, and pepper, and mix well. 6. Plating Generously stuff the roasted paprika with the well-mixed vegetables.
