A special class I attended without even having fully recovered from my travel fatigue. Under the theme "You Are What You Eat," I spent time restoring my physical senses and daily life through seasonal ingredients and "jang" (fermented sauces). The menu featured vegetable sushi, allowing me to enjoy the natural flavors of the ingredients! I have always practiced preparing meals with care at home, thinking of it as taking care of and treating myself well. However, even though I prepared the food nicely, I had been overlooking the act of looking closely at the ingredients themselves. Just as eating a warm home-cooked meal makes the body feel more refreshed, this was a time that made me reflect once again on what kind of food fills my body and whether I had been missing out on the precious things nature provides by relying on comfort.
