With daytime temperatures skyrocketing these days, I’m sharing a cheat sheet recipe for those living alone that you can whip up in just 5 minutes without using the stove! A cute transformation of tomatoes and onions I bought for a mere 5,000 won at the subway station on my way home from work 🛒 The tomato juice seeps right into the salty tsuyu, creating an incredible umami flavor. Thanks to the lemon juice and olive oil, it gives off a distinct vibe of a luxurious cold pasta dish 🥺 I added plenty of crunchy onions, and the texture combination with the chewy, springy udon noodles was insane. On hot days when you have no appetite, be sure to save this recipe and give it a try 🤍 🥣 1 packet of udon noodles, 1 tomato, a little onion, chives for garnish, 2 Tbsp tsuyu, 1 Tbsp lemon juice, 0.5 Tbsp olive oil 1. Score the tomato and blanch it in boiling water for 20 seconds, 2. Gently peel off the skin and dice it. 3. Cook the udon noodles using the same water used to blanch the tomatoes, then rinse them thoroughly in cold water to drain. (Rinsing in ice water makes them even chewier and bouncier! 🧊) 4. Finely chop your favorite onions and cut the chives for decoration into bite-sized pieces. 5. In a bowl, combine the chopped tomatoes and onions with 2 tablespoons of tsuyu, 1 tablespoon of lemon juice, and half a tablespoon of olive oil, then mix lightly to make the sauce. 6. Add the drained udon noodles and toss well to coat them with the sauce. 7. Arrange nicely in a bowl, garnish with fragrant chives, and you're done! #CornSoupRecords #오늘의우리집
