#리조또 #라따뚜이 Today's meal is ratatouille and mushroom risotto. I have some side dishes my mom made, but I bought the ingredients in advance before my parents called to say they were coming over, so I made and ate them today. I can't empty the food containers right away, but at least I can get rid of all the vegetables ☺️ For the ratatouille, eggplant and zucchini. I sliced the tomatoes, finely chopped the onions, leftover mushrooms, and the ends of the eggplant and zucchini, sprinkled oil, salt, and pepper over the minced beef, sautéed it with tomato sauce, then layered the eggplant, zucchini, and tomatoes alternately on top. I grated cheese over it, baked it in a preheated air fryer, and grated cheese one more time. For the risotto, I soaked the rice, chopped the onions and mushrooms, added them to a pan with a little oil and sautéed them, then crushed and mixed in the peperoncino. I added the soaked rice and a little water and sautéed, then poured in heavy cream and milk, stirring well to prevent sticking. Once the rice was cooked, I turned off the heat, seasoned it with salt and pepper, stirred it well, and served it in a bowl. + I had the window open while cooking because of the smoke and smell, so it was really hot. Maybe that's why I put down chopsticks instead of a fork.
