Prepare seasonal vegetables by trimming them into appropriate sizes. 2. Roast each vegetable individually with a small amount of oil (fryer 180ยฐC for 15 minutes is also okay). 3. Pat the roasted vegetables dry with a paper towel and place them in a container. 3.
