#노각무침 Around this time of year, I always make sure to buy the nogak that are frequently seen and season it with a sweet and sour dressing! Freshly seasoned nogak is, of course, the best side dish for rice, but you know it's a real delicacy when you boil some noodles, add gochujang (spicy dipping sauce) and sesame oil, and mix it all together, right? 😏 🥢 Be sure to try making this at least once this summer! ✔️ Seasoned Nogak Recipe [Ingredients] 1 Nogak (Korean cucumber), 1 Cheongyang chili pepper, a little green onion For pickling: 1 tablespoon sea salt + 2 tablespoons corn syrup (can be substituted with oligosaccharide) Seasoning: 1 tablespoon red pepper powder (for coating), 1 tablespoon gochujang (Korean chili paste), 1/2 tablespoon doenjang (Korean soybean paste), 1 clove minced garlic, 1 tablespoon vinegar, 1/2 tablespoon raw sugar (or granulated sugar), 1 tablespoon plum extract, 1 tablespoon dark soy sauce, 1 tablespoon sesame oil, 1 tablespoon whole sesame seeds [Instructions] 1. Add sea salt and corn syrup to the sliced Nogak and let it pickle for 20-30 minutes, then squeeze out the excess water. 2. First, mix the Nogak with red pepper powder to coat it. 3. Add all seasonings except sesame oil and whole sesame seeds, along with the sliced chili pepper and green onion, and mix well. 4. Finally, add sesame oil and whole sesame seeds and mix lightly.
