Although my mom is no longer with us, I started making pickled cherry tomatoes with plum extract last year using the plum extract she made and left behind. My mother-in-law made them for me at first, and they tasted so good when eaten with burrata cheese or made into lemonade. The recipe is so simple that now I’m the one sharing it with her. I’ll leave the recipe below! (It’s incredibly easy, so save it and be sure to try making it!) 🏷️Pickled Cherry Tomatoes Recipe [Ingredients: Cherry tomatoes, plum extract (store-bought is fine), airtight container, lemon juice] 1. Wash the cherry tomatoes thoroughly. 2. Fill a pot with plenty of water and bring it to a boil. 3. While the water in the pot is boiling, make a light cross-shaped incision on the skins of the washed cherry tomatoes. 4. Pour the cherry tomatoes into the boiling pot and blanch them for about 5-10 seconds. 5. Remove the tomatoes, place them in ice water, and peel off only the outer skin. 6. Place the peeled cherry tomatoes in an airtight container and sprinkle a little lemon juice over them. 7. Pour in plum extract to fill the container about two-thirds full (do not fill it completely due to the liquid released from the tomatoes). 8. Cover the container tightly, and you can enjoy it according to your preference after 2-3 days.
