Add salt and pepper to the 2 eggs and mix with the vegetables. Pour oil into a heated pan, pour in the mixture, and cook until golden brown. Flip it over, then layer the mozzarella cheese, cheddar cheese, and tortilla in that order. Flip it over once more so the cabbage is on top, then cut it in half.
