Eggplant Rice Pot Celebration(?) of Buying a Staub Pot 🍆 As a beginner cook, I find it amazing that the rice even turned out... It was easier than I thought but so delicious that I'm recording the recipe so I can make it again next time. The only downside is that while the rice alone is tasty, eating it with the stir-fried eggplant makes it go down so fast that you end up eating way too much??
