Kongguksu is a dish you absolutely must eat at least once when summer comes. This time, I tried making it a little special by using peas. ๐ซ For some reason, Kongguksu feels like a menu item that fits perfectly for lunch, neither breakfast nor dinner. Since it is difficult to have lunch with my roommate on weekdays because we are busy, I thought, "Now is the time!" and whipped it up in a flash. The soy milk was made by finely grinding half a block of tofu and boiled peas. The taste isn't much different from the familiar white Kongguksu, but thanks to the distinctive green color of the peas, it felt like the freshness of summer was captured in that single bowl. ๐ Thanks to the rich and nutty pea soup, both my roommate and I finished a bowl each in no time. With a hearty lunch, we spent a peaceful weekend in a good mood.
