It's been a while since I ate alone at home, so I intended to keep it simple, but after clearing out the fridge, it ended up being quite a feast. I whipped up a Caprese salad with cherry tomatoes, mozzarella cheese, basil pesto, and a drizzle of balsamic cream. I toasted some bread that had been sleeping in the freezer in the toaster. I topped the Sangha Ranch cream soup with pepper and sweet corn. It feels healthy, yet not so healthy? A dinner full of satiety.
