I tried making Buta no Kakuni, a Japanese-style braised meat dish. It takes a bit of time to make, but I felt proud because my family said it was delicious. ✔️Main Ingredients: 1kg whole pork belly, 1/2 piece of radish, 6 boiled eggs, 2 king oyster mushrooms, a handful of Korean chili peppers, 2 green onions, whole peppercorns, ginger powder, shredded green onions for garnish, whole sesame seeds ✔️Braising Sauce: 800ml meat broth, 100ml dark soy sauce, 100ml tsuyu, 100ml mirin, 1 tablespoon sugar, oligosaccharide 1. Cut the pork belly into large pieces, keeping in mind that it will shrink. 2. Place the meat on a well-heated stainless steel pan without oil and sear all sides until golden brown (remove any excess oil with a paper towel). 3. Pour enough water to cover the meat, add whole peppercorns, green onions, and ginger powder, and simmer over low heat for 1 hour. Boil the meat. 4. Cut the radish into meat-sized pieces and round off the edges (to prevent crumbling). 5. Remove the meat and strain the broth to prepare 800ml. 6. Put the meat, radish, and broth into a pan, then add 100ml of dark soy sauce, 100ml of tsuyu, 100ml of mirin, and 1 tablespoon of sugar. 7. Poke a hole in the center of a piece of parchment paper and cover the pan like a lid to allow the seasoning to penetrate evenly. 8. Simmer over medium-low heat for 20 minutes, then add the boiled eggs and king oyster mushrooms and simmer for another 15 minutes. 9. Five minutes before finishing, add the shishito peppers poked with a fork, and drizzle with a little oligosaccharide over high heat to add gloss. 10.
