Making Yakibitashi (Grilled and Pickled Vegetables) Soba to Bring Back Your Lost Appetite in the Sweltering Summer✨ I tried making Yakibitashi Soba, which I've been seeing a lot lately, and wow, what is this?! It brought back my lost appetite and was so delicious 🤍 Grilling the vegetables is a bit of a hassle, but it's great because one batch yields enough for 2-3 people! I'm excited to let it age and eat it again tomorrow 🎶 Everyone, you absolutely have to try making this!! I highly recommend it♡ Ingredients: Sauce - Hon-tsuyu, Sugar (Allulose), White Balsamic Vinegar (Vinegar), Hondashi (Optional) & Various vegetables and buckwheat noodles Sauce Recipe ① Add 300ml of water and 100ml of tsuyu and mix (3:1 ratio) (I used 4x concentrated Hon-tsuyu, so I added about 50ml more water!) ② Add 1 tablespoon of sugar (Allulose) and 1 tablespoon of white balsamic vinegar! ③ Add Hondashi! (Optional) (Since I used a tea bag type, I just put it in the mixed sauce and steeped it.) Cooking Recipe ① Lightly grease a pan! ② Thickly slice your favorite vegetables and grill them in the pan! ③ Put the grilled vegetables in a container, pour in the sauce, and let them mature in the refrigerator. (It should be at least half a day, but I was hungry so I took it out and ate it after just an hour.) ④ Boil the buckwheat noodles for about 5-6 minutes, then rinse them under cold water. ⑤ Put the noodles, vegetables, and sauce in a bowl and enjoy! Tip. *Slicing the vegetables thickly makes it taste better! *Make incisions in eggplant or zucchini, and poke holes in the Korean chili peppers with a fork! *Using dashi broth instead of plain water doubles the umami flavor! *Adding a soft-boiled egg makes it even tastier! *Eggplant is my top pick!
