🍆Fried Eggplant🍆 Summer is the season for eggplant lovers, isn't it? The eggplants in Dad's garden are growing vigorously, multiplying, multiplying, so I brought a few home while I was there to visit~ Eggplant is delicious in salads and stir-fries, but it tastes best when fried, doesn't it? 👍🏻 I whipped this up in no time using Teacher Eonam's super simple recipe. 1. Slice 2 eggplants thickly and place them in a bowl. Add 1 tablespoon of sugar and 0.5 spoon of salt and mix. 2. Once the eggplant releases its juices, add 4 tablespoons of potato starch and mix loosely. 3. Pour plenty of oil into a frying pan and fry the eggplants evenly. 4. Add 3 cloves of garlic and green onions to 4 tablespoons of the oil used to fry the eggplant and stir-fry. 5. Add 1.5 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of allulose, and 1 tablespoon of vinegar, bring to a boil, then make a starch slurry to thicken the sauce. (If you add water to the starch remaining in the bowl to make it...) It works~) If you drizzle the sauce over the fried eggplant and eat it, ah~ it's so delicious!
