Today, I tried making a slightly different kind of gimbap using Brie cheese, a representative French cheese. The thick and rich creaminess characteristic of Brie cheese melts smoothly in your mouth, while the salty jambon adds an umami flavor. Add to that the subtle bitterness of arugula, refreshing carrot rappe, and crunchy pickled radish—it's all perfect! Ingredients (for 4 rolls of Gimbap) 120g Brie cheese 4-5 slices of Jambon A handful of arugula Carrot Rapé Cucumber pickles or pickled radish 2 sheets of Gimbap seaweed 🍚 2 cups warm cooked rice 0.5 tablespoon olive oil 0.1 teaspoon salt 🥕 Carrot Rapé 1 carrot 0.1 teaspoon salt 1 tablespoon white balsamic vinegar 0.3 tablespoon Dijon mustard 1 teaspoon honey (optional) Instructions ① Finely julienne the carrot, marinate it in salt for about 10 minutes, and squeeze out the excess water. ② Add white balsamic vinegar and Dijon mustard, then lightly toss to make a refreshing carrot rapé. ③ Add olive oil and salt to the warm cooked rice and mix well to season. ④ Spread a thin layer of rice on the seaweed sheet, place thick slices of Brie cheese on top, and generously top with jambon, arugula, carrot rappe, and cucumber pickles. ⑤ Finally, add a little more rice, press down to wrap the ingredients, and roll it up tightly. ⑥ Lightly brush the surface with olive oil, slice into bite-sized pieces, and it is complete. Brie cheese allows you to enjoy its soft and creamy texture without heating, so it paired exceptionally well with gimbap. The rich, thick creaminess that slowly melts in your mouth, combined with the umami of the jambon and the fragrant bitterness of the arugula, creates a flavor that deepens with every bite.
