August is just too hot. Still, there is something I always do around this time of year. It is drying vegetables 🍆🍋🧅 Among the various ingredients I've been drying since last week, I made pot rice using dried eggplant slices. The rice cooker is Momo's Sotbat again today ♡ @momo__sotbat I don't really like the mushy texture of fresh eggplant, so I use dried eggplant like this. The happiness that time brings is similar to pot rice, isn't it? I'm a housewife of 10 years who usually eats alone on weekdays, but every once-in-a-lifetime dinner with my husband is always wonderful. I start the pot rice about 20 to 30 minutes before he arrives while I wait for him to get off work. As soon as my husband walks in saying, "I'm hungry!" while the rice is steaming, my steps start to race. Haha. Today's pot rice consisted of eggplant packed with meat, topped with stir-fried aged kimchi. My husband polished off two bowls in no time.👏👏 I even scraped every last bit of the salty crispy rice crust forming at the bottom. Lol.
