My child eats peaches well, so I bought nectarines this time, but they were way too sour! If the child doesn't eat it, it automatically ends up in Dad and Mom's mouths. Actually, I'm not the type to go out of my way to eat fruit, but it felt like a waste to throw it away, so I just followed my instincts and tried making it. But the combination was so good and delicious that I brought the recipe here to share with you! Ingredients: 2 nectarines, Bocconcini cheese, 5-6 fresh basil leaves, 20g walnuts, 15g Grana Padano cheese, 1T extra virgin olive oil Dressing: 2t balsamic vinegar, 2t honey, 1t lemon juice, 2 pinches salt, a little pepper Lightly toast the walnuts to bring out their nutty aroma, then coarsely chop them. Wash the nectarines thoroughly and cut them into bite-sized pieces with the skin on. Tear the basil into large pieces by hand or julienne it thickly. Mix balsamic vinegar, honey, lemon juice, salt, and pepper to make the dressing. Add the dressing to the nectarines, bocconcini cheese, basil, and walnuts, then toss lightly. Place on a plate, drizzle with olive oil, top with grated Grana Padano cheese, and sprinkle with a little pepper to finish! With the fragrant basil and savory cheese added to the peaches, they actually go together much better than I expected🍑🌿 With the sweet and sour dressing combined with the nutty flavor and crunchy texture of the walnuts, this is a salad perfect for enjoying lightly in the summer.
