A 10-Year Hit LA Galbi Recipe Just Make LA Galbi This Way! With just one properly made LA Galbi marinade, you won't envy store-bought galbi marinade. Especially when you make it at home, you can adjust the sweetness to your taste, allowing you to create a marinade that isn't too sweet and has the perfect balance of sweet and salty. This recipe has been loved on my blog for over 10 years and is a truly delicious LA Galbi recipe with over 100 verified reviews. Today, I will share the golden recipe for LA Galbi marinade that I have been making for a long time! Seasoning Ratios Based on 1kg of LA Galbi 1st Marinade 3 tablespoons (50ml) Mirin or Sake 100g Onion 1 piece of canned pineapple ring or 3 tablespoons (50g) Grated Kiwi 1/2 cup Apple Juice 1/2 cup Pear Juice 3 heaping tablespoons Brown Sugar 2nd Galbi Marinade 1/2 cup (100ml) Brewed Soy Sauce 1 tablespoon Sesame Salt 1 tablespoon Sesame Oil 2 tablespoons Minced Garlic 1/2 teaspoon Ginger Juice 1/2 teaspoon Black Pepper 📌 If you want to marinate pork ribs, Simply add 1/2 tablespoon of ginger juice to the same marinade as for LA Galbi. ⸻ Seasoning Ratios Based on Rib Quantity These are the marinade ratios provided based on 1kg of ribs. As the quantity increases, it is sufficient to slightly reduce the amount of marinade, so please try making and using the ratios below. Ribs 2kg → Approx. 1.9 times the seasoning Ribs 3kg → Approx. 2.8 times the seasoning Ribs 4kg → Approx. 3.7 times the seasoning Ribs 5kg → Approx. 4.6 times the seasoning Ribs 6kg → Approx. 5.5 times the seasoning Ribs 7kg → Approx. 6.4 times the seasoning Ribs 8kg → Approx. 7.3 times the seasoning Ribs 10kg → Approx. 9 times the seasoning ⸻ 1. Removing Blood from Frozen LA Galbi Pour plenty of cold water over the frozen ribs and remove the blood for about 30 minutes. Please be careful not to soak them in water for too long, as this can cause the flavor and juices to drain out, and the meat may spoil, especially during the summer. Once the water turns red, change the water three or four times while removing the blood. At this stage, the frozen ribs often stick together. If you try to force the ribs apart, they may tear, so please let them thaw naturally while changing the water occasionally. While the blood is draining from the ribs, prepare the fruit marinade to tenderize the meat. ⸻ 2. Making Delicious Rib Marinade with Fruit Please prepare the specified amounts of onion, kiwi, apple, pear, pineapple, and mirin or sake. If you are using relatively tender ribs, such as American or Korean LA galbi, you may omit the kiwi. Put the prepared fruits and mirin or sake into a blender and blend until smooth. Straining the mixture through a sieve once will result in a cleaner marinade. 📌 Do not add too much kiwi. Kiwi contains enzymes that break down protein, so adding too much or marinating for too long can cause the meat's texture to become excessively soft. Please be sure to follow the specified amounts. Add 3 tablespoons of brown sugar and mix to complete the first stage of marinating. ⸻ 3. Marinating the Ribs After draining the blood for about 30 minutes, wash the ribs thoroughly to ensure no bone fragments remain. Drain the water sufficiently and arrange the ribs neatly in a container. Pour the first batch of fruit marinade evenly over them and let them marinate for about 10 minutes. 📌 Do not discard the initial fruit marinade! Use it as is along with the second marinade. Please make sure to check this step in the video. After tenderizing the meat for about 10 minutes, proceed to make the second marinade. ⸻ 4. Making the Second Marinade Add 1/2 cup (100ml) of brewed soy sauce, 2 tablespoons of minced garlic, 1/2 teaspoon of ginger juice, 1 tablespoon of sesame salt, 1 tablespoon of sesame oil, and 1/2 teaspoon of black pepper, and mix well. You can add a little more black pepper according to your preference. Pour the finished second marinade over the ribs and mix well so that the seasoning penetrates evenly into the spaces between the ribs. ⸻ 5. Aging in the Refrigerator After mixing the LA ribs to ensure even seasoning, seal the container and let it age in the refrigerator for about half a day. Aging over time allows the marinade to penetrate the meat well, allowing you to enjoy a deeper, more delicious LA rib flavor. 🥩 Storing Marinated LA Ribs Store the marinated raw ribs in the refrigerator. If you do not plan to eat them within a few days, it is recommended to divide them into portions and freeze them. ⸻ 6.
