Eggplant Pizza 🍆🍕 I love pizza with plenty of cheese and tomato sauce, so I often make this using eggplant as the dough. 🤍 Since summer eggplants are at the end of their season, this is a dish you should eat a lot of while they are still affordable. ꒰ᐢ. .ᐢ꒱ Slice the eggplant thinly, sprinkle it with a little salt, and bake it in the oven. Baking the eggplant beforehand reduces moisture and prevents the flavors from clashing with the toppings! Then, add a sauce made by sautéing canned tomatoes, onions, bacon, and basil rub, top it with plenty of cheese, and you're done! 🍕 I also added corn and green olives.
