I thought all knives were pretty much the same, but after comparing and using them myself, I found there was a difference I hadn't expected.🔪 The product I used this time is the Damchirak Damascus Chef's Knife. I compared it by cutting the same materials directly with the knife I used previously. Even when cutting a hard green mango, I liked the way it glided in smoothly without applying much force. I also liked that it cut relatively cleanly even on foods that tend to get crushed, like mini sandwiches.👍 I could really feel the difference in how much less strain was applied to my wrist, especially when cutting hard ingredients. If you look closely at the blade, you can see the distinctive wavy pattern of Damascus steel, which gave it a luxurious feel when placed on a cutting board. It is said to be made using 166 HyperLayer technology, featuring a total of 67-layer laminated structure—combining one layer of high-hardness core steel with 66 layers of premium stainless steel—and is manufactured with a hardness of 58–60 HRC. Compared to standard stainless steel knives, the sharpness lasts up to eight times longer, and since the handle and blade are connected as a single piece, there is less room for food to get stuck, making it easy to clean and maintain. Since kitchen knives are items used almost every day, I think the biggest difference is ultimately how well they cut and how comfortable they are for the wrist.
