#CornSoupRecord #TodaysAtHome A daily routine of eating heartily and satisfyingly even when alone My roommate went out for an appointment, so I had to eat alone. So, to make the meal even more delicious and filling, and to use up the ingredients in the refrigerator, I tried making my usual favorite sausage and olive pot rice, with tomatoes on the side. Since soup is essential with rice, I boiled up some bubbling soybean paste stew, and prepared stir-fried shiitake mushrooms and seasoned steamed bell peppers. I put in so many ingredients that, even though I only used one cup of rice, I ended up with a pot rice dish enough for two people🤣 I scraped the bottom of the pot clean to eat the crispy rice crust, and ate heartily until I felt like my stomach was going to burst. Actually, my roommate says she doesn't understand the charm of pot rice with all sorts of ingredients mixed into it... She says rice should just be rice or something...🤨 Anyway, when my roommate wasn't around, I whipped up a meal just the way I like. I eat really well even when I'm alone, don't I?😙 _ 🍅 Tomato Sausage Olive Pot Rice 🫒 𖠚 Ingredients (2 servings) 1 cup rice, tomato, sausage, olives, onion, shiitake mushrooms, green onions, olive oil, salt, shio konbu, chicken stock 𖠚 Instructions 1. Prepare the tomato, sausage, olives, onion, and shiitake mushrooms in two forms: minced and diced for garnish. 2. Drizzle olive oil in a pot, add the diced ingredients for garnish, sprinkle with a little salt, sauté, and then set aside. 3. Add the chopped tomatoes, sausages, olives, onions, and shiitake mushrooms to the same pot. Season with salt, shio konbu, and chicken stock to your taste, then sauté. 4. Once the ingredients are sufficiently sautéed, add 1 cup of soaked rice and sauté until fragrant. 5. Add 1 cup of water in a 1:1 ratio with the rice and bring to a boil over medium heat, stirring occasionally. 6. Once the water has reduced and a line forms on the bottom of the pot when stirred with a spatula, cover the pot and cook over low heat for 12 minutes. 7. Open the lid, sprinkle the chopped scallions thinly and widely over the top, and then evenly spread the pre-sautéed garnish ingredients over the top. 8. Cover the pot again, turn off the heat, and let it steam for 5 minutes.
