Soy Sauce Shiitake Mushroom and Dill Cream Cheese Sandwich 🍄 I wondered if a sandwich would taste good without meat, but I grilled the shiitake mushrooms until golden brown and stir-fried them in soy sauce seasoning, and it had a rich umami flavor just like bulgogi. First, thinly slice 1/4 of an onion, and marinate it for about 10 minutes in 1 tablespoon of vinegar, 0.5 tablespoon of sugar, and a pinch of salt. I highly recommend adding this tangy onion, as it perfectly balances the rich flavor of the dill cream cheese. Slice 4 shiitake mushrooms thinly and sauté them in an oiled pan until golden brown. Instead of adding the seasoning from the start, you should sauté the mushrooms until they are sufficiently browned to enhance the flavor significantly. Add 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, 0.5 tablespoon of oligosaccharide, 1/3 tablespoon of minced garlic, 1 tablespoon of water, and pepper, then sauté. Simmer until the sauce thickens until almost nothing remains. Lightly toast the inside of the bread slices to make them crispy. The dish is finished by layering the ingredients in the following order: dill cream cheese → tangy onion → soy sauce shiitake mushrooms → Gouda cheese. The salty shiitake mushrooms and tangy onion surprisingly pair really well with the fresh and nutty flavor of the dill cream cheese. Even though I made this without meat, the shiitake mushrooms are chewy, making it quite filling. One tip: make sure to reduce the shiitake mushroom sauce until it thickens completely!
