Since we had minced beef at home on Chuseok, I quickly stir-fried the beef and eggplant together. While it was steaming, I added eggplant and carrots on top to cook them slightly, then mixed it all up and ate it. When thinking about a slightly healthy meal, eggplant and carrots are a great choice, haha. My husband dislikes eggplant, but he actually eats it well when I stir-fry it with beef and serve it with rice like this. ^^ The Staub Rice Cocotte is deep, so it is indeed convenient for cooking rice. ^^ There is no need to worry about it overflowing either. Even though I have several at home, I think I end up using this one the most.
