Today's lunch with the kids. After thinking about what to make, I decided to make a frittata with the vegetables in the fridge. Stir-fry spinach, onions, mushrooms, corn, etc. in a pan, put them in an oven-proof dish, and pour in the egg mixture and milk cheese. A simple frittata that is complete when baked in the oven until the eggs are cooked! We eat it with grain bread, and the kids eat it with rice bread for a filling meal :-) I had a great meal today too!
