There's a burdock ghost living in my house๐ง๐ป๐ฆ๐ป I made braised burdock for the first time. My kids love it so much that my parents used to make it for me, and since I was making side dishes, I tried it too!๐โโ๏ธ Brown burdock seems like it takes a lot of work, so I never thought about making it, but I think it's a side dish that tastes as good as the effort put into it๐ It's simmered over medium heat until it's soft, so it has a chewy texture, and it's a sweet and salty combination, so kids can finish a bowl of rice with just burdock. ๐ I especially recommend a combination of soybean paste stew, fermented soybean paste stew, and seaweed. Even my kids who don't like to eat breakfast eat this menu right from the morning๐ ๐ทChewy braised burdock 1. Peel the burdock, slice it thinly, and soak it in vinegar water (vinegar 1). (Browning prevention) 2. After rinsing once, add 1 part salt and 1 part vinegar to boiling water and blanch for 3 minutes. (Do not rinse with cold water) 3. Seasoning (based on 300g of burdock): Add blanched burdock, 7 parts soy sauce, a cup of water, 2 parts brown sugar, 2 parts olive oil, and 0.5 parts sesame oil and boil over high heat, then simmer over medium heat for about 15 minutes. 4. When the moisture has evaporated somewhat, add 1 part of seasoning (I used seasoning syrup!) and simmer completely. (Adjust the sweetness with the amount of seasoning) At first, I wondered if it would really work, but after simmering for a long time, the burdock stew turned out really glossy and chewy. ๐ I'll have to make more next time. I'm happy that the kids ate it all in one day, but I feel empty. ๐คฃ
