Our kitchen color of choice is pastel mint green. Chosen because the color seems unique, cute and quite timeless. The installation of the backsplash was also spontaneous, when the craftsman was installing the ceramic backsplash, I immediately said, "Just make it irregular, bro, you don't need to add everything to make it unique."
